Ingredients:

  • Carrots (Gajar): 1 kg (preferably red, juicy variety)
  • Full-fat milk: 1 liter
  • Ghee (clarified butter): 3–4 tbsp
  • Sugar: ½ to ¾ cup (adjust to taste)
  • Cardamom powder (elaichi): ½ tsp
  • Cashews: 10–12, chopped
  • Almonds: 10–12, chopped or slivered
  • Raisins (optional): 1–2 tbsp
  • Khoya/Mawa (optional): 100g (for extra richness)

Instructions:

Step 1: Prep the Carrots

  • Wash, peel, and grate the carrots (use a hand grater or food processor).
  • You should get around 4–5 cups of grated carrot from 1 kg.

Step 2: Cook Carrots in Milk

  • In a heavy-bottomed pan or kadhai, add the grated carrots and milk.
  • Cook on medium heat, stirring occasionally.
  • Let the carrots simmer and cook in the milk until all the milk is absorbed. This may take 30–40 minutes.

Step 3: Add Ghee

  • Once the milk has evaporated, add ghee.
  • Sauté the mixture for 5–10 minutes, until the carrots start to reduce further and become slightly glossy.

Step 4: Add Sugar and Cardamom

  • Add sugar (adjust sweetness to your preference).
  • Stir well; the sugar will release some moisture—keep cooking until it evaporates.
  • Add cardamom powder and mix.

Step 5: Add Nuts and Khoya (if using)

  • Add chopped nuts and raisins.
  • Optionally, add crumbled khoya and mix thoroughly. Cook for another 5–7 minutes until everything combines well.

Step 6: Serve

  • Serve warm, garnished with extra nuts or a dollop of cream.
  • Can also be served chilled or with vanilla ice cream.

Tips:

  • Milk substitute: You can use condensed milk (reduce sugar accordingly) or milk powder for a quicker version.
  • Vegan option: Use almond or oat milk + vegan ghee (or coconut oil) and skip khoya.
  • Storage: Refrigerate in an airtight container for up to 5–7 days. Reheat before serving.
