🌟 Suji Halwa Recipe (Serves 3–4)

🧾 Ingredients:
- Suji (semolina/rava) – 1/2 cup
- Ghee (clarified butter) – 1/4 cup (4 tbsp)
- Sugar – 1/2 cup (adjust to taste)
- Water – 1.5 cups
- Cardamom powder – 1/4 tsp
- Cashews – 8–10 (halved or chopped)
- Raisins – 8–10 (optional)
🔪 Instructions:
1. Prepare sugar syrup:
- In a separate saucepan, bring 1.5 cups water to a boil.
- Add 1/2 cup sugar and stir until fully dissolved.
- Optionally, add cardamom powder for aroma.
- Keep this mixture warm on low heat.
2. Roast the semolina:
- In a heavy-bottomed pan, heat 1/4 cup ghee.
- Add cashews and sauté until golden, then add raisins (they’ll puff up).
- Remove and set aside the nuts/raisins.
- In the same ghee, add 1/2 cup suji.
- Roast on medium-low heat, stirring continuously, until suji turns light golden and aromatic. (Takes 6–8 minutes.)
3. Add sugar syrup to suji:
- Slowly and carefully pour the hot sugar water into the roasted suji. It will sizzle—stir continuously to avoid lumps.
- Mix well and cook on low heat.
4. Simmer:
- Cook for 3–5 minutes, stirring until the mixture thickens and starts to leave the sides of the pan.
- Add roasted nuts and raisins.
